Cucumber & Pear Carpaccio

Ingredients
2 cups arugula or baby spinach
20 sprays Wish-Bone® Salad Spritzers® Italian Vinaigrette Dressing
2 medium red Bartlett pears, cored and thinly sliced
1 small seedless cucumber, thinly sliced
1 cup chopped Candied Walnuts*
1/4 cup crumbled blue cheese (about 2 oz.)
4 slices white bread, toasted and crusts removed
Pinch ground black pepper
  1. Evenly arrange arugula on 4 plates, then spritz each with 3 sprays Wish-Bone® Salad Spritzers® Italian Vinaigrette Dressing. Evenly top with pears and cucumber; evenly spray with remaining Dressing. Top with Candied Walnuts.
  2. Spread blue cheese on toast, then sprinkle with pepper. Cut into triangles, then arrange on salads.

*Candied Walnuts: In 10-inch nonstick skillet, cook walnuts with 1 cup walnut halves with 1/4 cup sugar over medium heat, stirrring frequantly, 5 minutes or until sugar is golden. On wax-paper-lined cookie sheet, spread walnuts in single layer; cool completely.
